I’m a Florentine and I’m lucky enough to live in the middle of an olive grove surrounded by woods on a hill overlooking Florence, where nature donates us the company of deer, squirrels and other little friends. The house shows my background as an architect-designer, with home-made pieces assembled from antique furniture and works of some artist friends. The kitchen, designed with different colors in “De Stijl” style, is the heart of the apartment and has a big countertop, perfect to work together. In this context I organize social eating themed events – during summer outside in the shade of a cypress or in the cool of the evening – with great passion for cooking and conviviality, with the intent to share the pleasures of the table while meeting new friends.
The quality and origin of seasonal products are essential in my recipes, because I want only the best for what concerns nutrition facts and flavor. I love fish, especially the bluetailed one because is good and healthy. I often put it in my recipes, and I only use fish coming from the Tuscan sea. In any case, whether sea or land, with their roots in the Tuscan and national tradition and with Mediterranean influences, my dishes are always evolving, because for me cooking is imagination. I like to experiment and amaze with new flavors, shapes and colors.
Fabio Campetti is a great cook and on one hand organized in his kitchen and very imaginative on the other hand. I took a cooking session with him and it was an enriching experience. Fabio is a chef in its full meaning…run to him!!
Fabio picked us up from Florence and drove us to his home in the hills about 10kms outside the centre of Florence. He was perfectly on time and immediately warm and friendly and welcoming and so polite. The drive was relaxed and chatty and Fabio stopped the car so that we could take photos of the spectacular view when we got to a perfect spot overlooking Florence.
His home was so lovely and in a beautiful rural spot surrounded by olive groves and woods. It was a wonderful place to spend a few hours learning to cook good Italian home food. For us this was absolutely perfect. It was like hanging out with old friends, chatting and cooking and all the while learning without it being stressful or formal. Fabio had provided us with recipes beforehand and whilst not difficult were all delicious and the sort of thing we will happily reproduce back at home in Australia. Fabio is a very gentle person who genuinely loves to cook and share his experience and love of cooking. This is not a cooking school experience with stress and classroom rules, or tricky cooking techniques or recipes, rather an informative and satisfying day of fun in someone’s home.
After the cooking, we sat outside at the most charming table, under the trees and shared the food and some great wine with Fabio and his lovely wife. The opportunity to spend a day in the home of such wonderful people and learn some good home cooking was a highlight for us, we loved every minute. Thank you Fabio!
